Proses menggongseng kopi (roasting) secara tradisional masih banyak dijumpai di pedesaan Aceh. Ini merupakan tradisi turun-temurun sejak jaman Belanda dulu. Untuk produk kopi khas non organik, tradisi ini akan tetap dipakai guna meracik kopi istimewa khas Aceh.
