Chinese formal tea ceremony was not something with which I was the least bit familiar, But through the wife of a friend, recently returned from China, I was introduced to the practice and even learned to perform the ceremony-- though not at the level of a master, or even a student of the master. Here, the tea mistress pre-wets, or "washes" the tea. the goose necked pot is as important to tea preparation as it is to making pour-over coffee.
